Easy Meals: Slow Cooker Vegetable Soup
I have given you some easy meals for the working couple. But there are some meals that are even easier. If you own a slow cooker, you can put your ingredients in the slow cooker in the morning, go about your day, and have a meal ready when you get home that evening. Perfect. Just make sure you plan ahead and have everything you need.
I recently made vegetable soup in my slow cooker, and it was pretty easy. Now, it did take time to chop and dice all of the vegetables, but it was worth it. Here is my recipe:
Slow Cooker Vegetable Soup
6 cups water
1 ½ cups tomato puree
2 celery stalks, chopped
½ red onion, finely chopped
2–3 garlic cloves, minced
3 carrots, diced
2 medium potatoes, peeled and diced into small cubes
3/4 cup of corn
3/4 cup of peas
1 teaspoon pepper
1 ½ teaspoons salt
1 tablespoon Italian seasoning
1 tablespoon olive oil (for sauteing the onions)
6 ounces of small shaped noodles (boil, drain, and add these to your finished soup) – these are optional
Saute the red onions in one tablespoon of olive oil until they are translucent. Add them to the slow cooker.
Once your onions are ready, add all of the chopped vegetables and seasonings.
Cook in your slow cooker for 5–6 hours on high.
IMPORTANT NOTE: Wait until after you have cooked the soup for 5–6 hours on high before adding the pre-cooked noodles to the soup.
This recipe makes 12 servings, so double check that your slow cooker is at least a 6-quart size.
